May Meal Faves

Some SBD recipes I tried out this month that are absolutely mouth-watering:

Sides/Snacks
* Celery with artichoke spinach dip (fat-free cream cheese, low-fat mayo, and reduced-fat Italian cheese blend)
* Celery filled with tuna and low-fat mayo
* Butter beans in green salads
* Baked mushrooms stuffed with the chopped stems, spinach and reduced-fat Italian cheese blend
* Tofu lemon aioli dip (especially from the PCC deli!)
* Roasted red pepper hummus (without tahini)

Meals
* Egg quiches: lots of chopped veggies baked with eggs and reduced-fat cheddar cheese
* Very lean (tough) cuts of beef marinated and braised in oyster sauce, lemon juice, Far East spices, soy sauce, and beef stock. The cooked meat is delicious and tender on its own, stir-fried with veggies or in salads and soups
* Tuna or salmon burgers fried in olive oil and topped with melted cheese (no bun)
* Cheesy tomato casserole: fat-free cottage cheese topped with sauteed canned tomatoes, basil, dill, and melted reduced-fat Italian cheese blend
* Creole casserole: shrimp, okra, tomatoes, green peppers, onion, kidney beans, cayenne pepper, basil and reduced-fat cheddar baked in reduced-fat cream of mushroom soup
* Turkey taco soup: sliced turkey sausage, taco seasoning, black beans and fat-free sour cream in canned vegetable stew
* Eggs Benedict with hollandaise made from dry mix (no English muffin)
* Scallops, capers and basil sauteed in olive oil, tofu aioli, and lemon juice (SOOO good!!)
