-Apricot-glazed pork loin (prepared in slow cooker with onion, chicken broth, and sugar-free apricot preserves)
Dinner
-Baked pork loin stuffed with spinach, mushrooms, parmesan, and whipped cream cheese
Some quick notes about my first day: this diet is incredibly filling! I'm not used to eating so much while I'm dieting, and especially not such hearty food, so I kind of felt like I was cheating somehow. But everything on today's menu is allowed for Phase 1, so I guess I've done okay. I was surprised that the sugar-free apricot preserves are allowed; there's a ton of carbs in just 1 tablespoon. But almost all of it ended up at the bottom of the slow-cooker so maybe it doesn't make much of a difference.
Anyway, it was a surprisingly easy first day!
